AWAFI MILL Whole Dried Anchovies 250g, traditionally known as Nethili, Netholi, Natholi or Kozhuva, are small anchovy fish that have been naturally dried for use as a cooking ingredient.

The fish are supplied whole, with their heads, tails, skin and small natural bones retained. Drying concentrates the seafood character, resulting in a savoury, briny and umami-rich flavour that works well in a wide range of South Indian, Sri Lankan and Southeast Asian-style preparations.

The exact amount of salt used during processing should follow the supplier's formulation or processing documentation. The supplied image and product appearance alone cannot establish whether salt was added.

HOW TO USE

Before Cooking:

Take the required quantity from the package.

Inspect the fish and remove any unsuitable foreign matter.

Rinse briefly in clean water one or two times.

Drain thoroughly before cooking.

Avoid prolonged washing unless required by the selected recipe because dried fish may soften quickly.

To Reduce Surface Saltiness:

Place the required quantity in a bowl.

Cover with clean water and soak for approximately 5–10 minutes.

Drain and rinse briefly.

Pat dry before frying, or add directly to the selected curry.

Longer soaking may reduce flavour and soften the fish excessively.

Optional Cleaning:

The fish may be cooked whole or cleaned according to preference.

To clean:

1. Remove the head.

2. Pull away the inner portion when desired.

3. Remove loose fins or hard fragments.

4. Rinse briefly.

5. Drain thoroughly.

Small bones may remain naturally even after cleaning.

For Crispy Frying:

Rinse and drain the anchovies.

Pat them dry.

Season with ingredients such as chilli powder, turmeric, black pepper, crushed garlic and curry leaves.

Shallow-fry or deep-fry until fully cooked and crisp.

Drain excess oil before serving.

For Curry:

Rinse or briefly soak the dried anchovies.

Prepare a curry base using onion, tomato, garlic, ginger, chilli, turmeric, tamarind, coconut milk and curry leaves as preferred.

Add the anchovies and simmer until thoroughly cooked and softened.

Taste the curry before adding extra salt because the fish may already contain salt.

For Stir-Fry:

Rinse, drain and lightly fry the anchovies.

Add sliced onion, chilli, garlic and curry leaves.

Cook until the onions soften and the fish becomes aromatic and lightly crisp.

For Sambal or Chutney:

Dry-roast or fry the anchovies until fully cooked.

Combine with chilli, onion, garlic, coconut, tamarind or lime according to the selected recipe.

Grind or crush to the preferred texture.

For Rice and Noodles:

Fry the anchovies until crisp.

Add them whole or crushed to steamed rice, fried rice, coconut rice, noodles, porridge or savoury grain bowls.

RECIPE AND SERVING IDEAS

Spicy Nethili Karuvadu Curry:

Rinse the dried anchovies and soak briefly.

Prepare a gravy using onion, tomato, garlic, chilli, turmeric and tamarind.

Add the fish and simmer until softened and fully cooked.

Serve with steamed rice.

Coconut Anchovy Curry:

Prepare a curry base using coconut milk, onion, green chilli, turmeric and curry leaves.

Add the cleaned dried anchovies.

Simmer gently until the flavours combine.

Crispy Nethili Fry:

Rinse and dry the anchovies.

Coat lightly with chilli powder, turmeric, black pepper and rice flour when preferred.

Fry until crisp and serve with rice.

Onion and Chilli Anchovy Stir-Fry:

Fry the anchovies lightly.

Add sliced onion, green chilli, garlic and curry leaves.

Cook until aromatic and lightly caramelised.

Dried Anchovy Sambal:
