AWAFI MILL Golpar, traditionally known as Persian Hogweed, consists of whole dried fruits of Heracleum persicum. It has a distinctive earthy, herbal and citrus-like aroma with a warm, pungent and pleasantly bitter flavour. Traditionally used in Persian and Iranian cuisine, Golpar can be ground and added to pomegranate, broad beans, potatoes, vegetables, lentils, soups, stews, rice dishes, pickles and other recipes.

• Scientific Name: Heracleum persicum Desf. ex Fisch., C.A.Mey. & Avé-Lall. Golpar consists of whole dried seed-like fruits that are naturally thin, flat and oval with pale beige colouring and visible brown aromatic channels.
